SECOND PART OF QUARTERLY COURSE.
Complementary course of quarterly course. The aims of it is to learn more specific elaborations, giving emphasis to fun decorations.
Avant-garde flavors, spices, aromatic herbs and pure pastes of flowers, fruits and nuts will work. Different types of flours and grains, aromatic oils. Special sugars of origin and food technology products to achieve amazing final decoration.
We will learn to know and use the raw material and to develop different preparations typical of this type of pastry. Also we do several tastings of different ingredients.
6 modules will work in this course:
Module I: Cakes and gourmet cakes
Module II: Creams, fillings, covers, mirror and frosting.
Module III: Cookies, crunchy, meringues, marshmallow special backfill.
Module IV: Pies, tart, cobbler, icebox and icecream cakes.
Module V: desserts, cakes in glass and containers of glass, for travel (travel cake)
Module VI: tastings of fruits, spices, aromatic herbs
